1/4 cup of butter or margarine

1 1/2 cups of milk
1 tablespoon of grated onion
1/2 teaspoon of salt
2 lightly beaten eggs
1 1/2 cups of cooked and mashed sweet potato
2 cups of cooked and chopped spinach

Melt the butter or margarine in a pan; add the flour, stir well; add the milk, onion, and salt
Cook, stirring constantly, until the mixture thickens and bubbles
Remove from heat
Add some of this mixture to the eggs and then add it to the remaining mixture in the pan
Cook until everything is well mixed, stirring constantly
Add the sweet potato and spinach
Place in 8 molds with a capacity for 150g and bake in a slow oven for 20-25 minutes or until, inserting a knife slightly sideways, it comes out clean
Serve 8 portions.
