7 cups of water
4 tablespoons of olive oil

1 teaspoon of cinnamon
1/2 teaspoon of ground cumin
2 kg of sweet potatoes, peeled and cut into 3 cm cubes
2 kg of pork loin, cut into 2.5 cm cubes
4 cloves of garlic, minced
4 Scotch bonnet peppers, crushed
2 medium onions, chopped

In a large pot, heat the olive oil over medium heat and sauté the onion, garlic, and small pieces of pork until they are nicely browned
When all the meat is well-browned, add four cups of water and stir to combine
Let it simmer for 30 minutes

Add the cinnamon, salt, cumin, and Scotch bonnet peppers and stir in the remaining water
Let it cook for an additional 45 minutes or until the pork is tender
Add the sweet potatoes and continue cooking for another 30 minutes or until they are tender.
