Cut a capirinha chicken into pieces
Soak it in water with lime for a while
Wash it well with some fubá and let it drain through a tarragon sieve
Put a duck egg in a cast-iron skillet, frying a handful of annatto seeds first
Let it heat up well, then add the chicken pieces and braise them until they're golden brown
Add salt, garlic, and gradually pour in water, allowing the chicken to cook slowly
When the chicken is tender, reduce the heat and let the meat absorb some sauce from the skillet
Add sliced onion, parsley leaves, and chopped cilantro.
