2 1.5 kg whole chickens
1 cup all-purpose flour
2 tablespoons salt
1/2 tablespoon black pepper
2 tablespoons sweet paprika
8 tablespoons butter or margarine
1/2 cup lemon juice
4 tablespoons olive oil
2 crushed garlic cloves
4 cups chopped onion
1/2 teaspoon thyme
black pepper to taste

Cut the chickens into pieces
Season with salt, black pepper, and paprika
Coat in flour
Melt the butter or margarine in a baking dish inside the oven
Remove from the oven
Dip the chicken pieces in the hot butter and arrange in the baking dish
Roast for 20 minutes
Meanwhile, mix together lemon juice, olive oil, onion, garlic, thyme, and black pepper to taste
Pour over the chicken pieces and roast, basting frequently with the sauce, for an additional 30 minutes or until the chicken is tender
Serve in 8 portions
Serve with rice.
