Cut the chicken into eight pieces, leaving the skin intact
Let it rest for a bit
Sprinkle lemon juice and salt over each piece of chicken and let it sit for a few minutes
Allow the flavors to penetrate
Spread mayonnaise evenly over all the chicken pieces and wait a minute or two for the seasoning to take effect
Dip each chicken piece in biscuit crumbs, on both sides, and arrange them all in a baking dish
Place the dish in the oven and let it bake for about two hours, or until the chicken is cooked through
