To prepare: wash the chicken, dry it and cut into four pieces
Season with salt and pepper
Fry the chicken pieces in coconut oil on all sides until browned
Cut the onions, tomatoes, and peppers into slices
Add everything to the chicken and let it simmer for 10 minutes
Add the chicken broth and rice and let it cook for 20 minutes
To serve, add the sherry wine and cooked ham cut into strips
Sprinkle with parsley.
