1 package of cooked noodles, fresh (500 g)
For the sauce
1/3 cup of butter (65 g)
1 large onion (150 g), thinly sliced
1/4 cup of all-purpose flour (30 g)
1 1/2 cups of hot milk (360 ml)
1 1/2 teaspoons of salt
1/3 cup of grated Parmesan cheese (35 g)
1 teaspoon of parsley

In a large pot, bring 2.5 liters of water and 1/2 teaspoon of salt to a boil
Add half of the noodles and cook with the pot uncovered until it rises to the surface (about 3 minutes)
Remove with a slotted spoon, drain and place in a baking dish
Do the same with the remaining dough
Prepare the sauce: In a medium pan, melt the butter over high heat, add the onion and cook until golden
Add the flour and stir well
Add the milk, salt, Parmesan cheese, and parsley, stirring constantly until thickened
Pour it over the hot noodles and mix
Serve immediately
