Deskin the chicken and cut into small pieces
Season with salt and black pepper
Dredge in flour and set aside
In a microwave-safe dish, combine butter, olive oil, garlic, and onion
Microwave on high for 1 minute
Add the chicken, cover with plastic wrap (leaving a small opening) and microwave for an additional 10 minutes, or until the meat is cooked to your liking
Add the mushrooms and parsley, mix well and microwave for an additional 10 minutes
Let it rest for 5 minutes before serving and stir again
Serve still warm.
