2 lbs chicken breasts
"1/4 cup olive oil"
2 medium onions, chopped
2 green peppers, chopped
1 red bell pepper, finely chopped
1 clove garlic, minced
3 tomatoes, peeled and chopped
1 1/2 cups tomato puree
2 tablespoons white wine
1 1/2 teaspoons salt
a pinch of black pepper

1 1/2 cups tomato puree

Cut the chicken into serving-sized pieces and brown them in hot olive oil
Add the onions, peppers, and garlic and sauté lightly
Add the remaining ingredients and let it simmer slowly for 1/2 hour or until the chicken is tender
Serves six.
