Remove the skin and bones from the chicken breast and cut it in half lengthwise
Cut each piece horizontally to obtain four fillets
Cut each fillet in half, forming eight smaller pieces
On one side, mix together salt, black pepper, and lemon zest
Season the chicken with this mixture
Place a slice of cheese on top of each piece of chicken and press down gently
Beat the eggs lightly
With care, dip each piece of chicken topped with cheese into the egg and then coat in pancake flour
Heat the olive oil over high heat
Add the fillets and reduce heat to medium
Fry the fillets on both sides until they are golden brown
Remove from the oil and let excess oil drain onto paper towels
Keep warm in a turned-off oven
Serve with remaining lemon zest.
