Soak the chicken in water with lime juice for 30 minutes and drain
Season with garlic and salt
In a large skillet, heat the lard over high heat and fry the chicken until golden brown
Add the broth gradually, scraping the bottom with a wooden spoon

Reduce heat and add two more cups of water
Cook for
40 minutes
Add the annatto, stir, and cook for another 5 minutes or until tender
Place in a bowl, combine with onion, green onion, and mix.
