1 1/2 kg chicken
1/4 cup olive oil
2 whole garlic cloves, peeled
1 lemon
1/2 orange
10 grams whole peppercorns
2 sprigs of rosemary
1/2 cup white wine vinegar
2 cups dry white wine

Pat the chicken dry
Soak the olive oil and slowly baste the chicken
Fry only until it browns and doesn't form a crust
Pour the following marinade over the chicken: wine, vinegar, rosemary, garlic, peppercorns, lemon and orange, peel included; season with salt to taste
Cook the chicken slowly in this sauce for about 1 hour or until tender
Keep the pot covered throughout as needed, add white wine and vinegar in the same ratio above
When ready, store it in a ceramic or glass container, refrigerated
Serve chilled, with the sauce
