Place the flour in a shallow dish
In a small bowl, beat the egg with the milk until smooth
Add the wheat flour and salt, and mix well
Dip the chicken breast pieces into this mixture and then coat them with the flour
Arrange the coated chicken pieces side by side on a baking sheet lined with parchment paper or greased with butter
Brush the melted butter or margarine over the chicken pieces
Bake in a moderate oven (180°C) for about 1 hour, or until the chicken is cooked through
Do not cover nor turn the chicken while it's baking
Serve hot, quartered.
