Season the chicken with garlic and salt
Chop the calabresa sausage and spread it over the chicken
Arrange the mozzarella slices and sprinkle with parsley
Roll up the chicken like a croissant and secure tightly with kitchen twine
In a buttered baking dish, place the rolled chicken and bake in a preheated oven at 180°C for 30 minutes or until golden brown
If it dries out too much, baste occasionally with the fat that forms in the baking dish
Slice and serve with green leaves.
