Wash the chicken pieces well and dry them
Mix together the flour, salt, and black pepper
Put the flour mixture into a plastic bag and add the chicken pieces slowly, stirring to coat evenly
Beat the eggs with water
Coat the chicken pieces in the egg mixture and then in the panko breadcrumbs or crushed cornflakes
Let it rest for 10 minutes while heating the oil to about 1 cm deep in a pan
Fry about 6 pieces of chicken, skin side down, until golden brown on both sides
Add some tablespoons (scoop) of water
Cover the pan and simmer over low heat for about 20 minutes, or until the chicken is tender
Repeat the process until all the chicken is cooked, adding more oil and water as needed
This crispy fried chicken can be served cold or reheated in the oven.
