Mqualli is a yellow sauce obtained by using olive oil, ginger, and turmeric. It's used to marinate chicken.
2-3 lbs of chicken breast or thighs
1 generous tablespoon of grated ginger
1 teaspoon of ground turmeric
1/4 cup of olive oil
50g of butter or margarine
1 tablespoon of olive oil
1 small onion, peeled and left whole
a quarter of a preserved lemon, cut into 4 pieces
1 day-old preserved olives
to taste salt

a quarter of a preserved lemon, cut into 4 pieces
1 day-old preserved olives
to taste salt
Place the chicken breasts or thighs in a large pan together with the marinade
Add salt, olive oil, butter, ginger, onion, turmeric, and two cups of water
Stir well to combine
Bring to a simmer over medium heat, covered, and let cook until the chicken is cooked through, adding more water as needed
Turn the chicken breasts or thighs frequently to ensure they're coated evenly with the sauce
When the onion is tender, remove it and reserve
When the chicken is cooked, add the preserved olives, lemon quarters, and a sprinkle of salt
Simmer for a few minutes
Check the seasoning.
