Place the chicken strips in a saucepan and add chicken stock
Cook over low heat until they are tender
Drain them and let them cool
Make the pink sauce
Mix the yogurt with mayonnaise and season with salt, black pepper, ketchup
Assemble the dish
Cut the chicken into strips and arrange on a plate, alternating with sliced eggs
Drizzle with pink sauce and serve immediately
Garnish with scallions.
