Wash and dry the chicken pieces
Mix the herbs, olive oil, and cognac
Place the chicken pieces in this mixture
Let it rest for 1 hour
Season with salt and garlic
Place in a baking dish, pour the remaining marinade on top, and bake in a moderate oven (180°C) for about 45 minutes or until the chicken is cooked
If desired, serve with mashed potatoes
