Beat the eggs until no longer frothy and reserve
Heat a non-stick skillet over medium heat and pour in the eggs
Using a spatula, gently push the cooked egg towards the center, allowing it to set
When the omelet is almost fully set, sprinkle with salt, pepper, and nutmeg
Spread the ground beef, mushrooms, and chives onto half of the omelet
Incline the skillet over a serving plate and let the omelet slide onto the plate
Close the omelet to form a half-moon shape
Serve immediately.
