Soak the lentils in water for an hour
Drain and reserve
Chop the onion, garlic, and fresh parsley
Sear a portion of these aromatics and smoked bacon, cut into small cubes, in a large pot
Add the rosemary
Reserve the rest
Place the beef, salt, and black pepper
Add 2 liters of water and let it cook for 25 minutes
Then, separate the broth from the meat and reserve
Cook the lentils in this broth
Add the peeled and seeded potatoes and carrots, cut into medium-sized pieces
Join a sauté made with the reserved aromatics
Separate the lentils from the broth and place them in a dish with chopped onion, bell pepper, and tomato
The meat should be arranged in another dish with potato and carrot
Regulate the two dishes with hot broth.
