This is a recipe for the day after Christmas, elegant and uses leftover turkey.
2 large onions, chopped
1 garlic clove, minced
1/4 cup butter or margarine
1 can (300g) of tomato puree
1 tablespoon paprika
salt and pepper to taste
2 cups chicken broth (use cubes)
3 cups cooked turkey
1 cup sour cream

Gently sauté the onions and garlic in butter for a few minutes
Add the remaining ingredients except for sour cream
Simmer slowly for 20 minutes
Just before serving, cover with sour cream
Serve with macaroni or rice
