In a blender, beat the eggs, milk, and four cheese soup mix
Mix in the grated zucchini, chopped parsley, and olive oil
Grease a small non-stick skillet with a little butter
Place a portion of the mixture and cook on both sides until golden brown
Repeat the process until all the batter is used up
Serve immediately.
