1 cup of milk
1/4 cup of olive oil
4 tablespoons of all-purpose flour
2 tablespoons of chopped parsley
800g of cod in brine (drained and rinsed)
4 eggs (whites and yolks separated)
4 tomato halves, peeled and seeded
3 cloves of garlic
2 large onions

Wash the cod, removing skin and bones
Dry and reserve
Mince garlic and onion and sauté them in olive oil
Add the cod, tomato, and parsley and sauté, stirring occasionally, for 20 minutes
Add the flour, mix well, and add milk
Cook, stirring occasionally, until slightly thickened
Season with salt and black pepper
Remove from heat
Grease a baking dish with olive oil and place the cod mixture
Heat the oven to high temperature
Beat egg whites until fluffy
Mix in yolks and beat until smooth
Reserve half cup of beaten eggs and mix into the cod mixture
Cover with remaining beaten eggs
Bake for about 10 minutes
Remove from oven, decorate with tomato, bell pepper, and olives, and serve.
