Place the olive oil in a skillet
Add the garlic and fry until golden brown
Add the tomatoes, parsley, and anchovies
Fry for 2 minutes, stirring constantly
Mix the eggs with a fork and add to the skillet
Stir and let cook on low heat until the bottom starts to brown
Let the omelette slide onto a plate and flip to cook the other side
Place in a serving dish and serve
Serve 4 portions.
