2 cups of boiling water
1 medium zucchini cut into slices
2 tablespoons of olive oil

Drain the boiling water over the zucchini and squeeze out excess moisture
Heat the olive oil in a frying pan
Add the zucchini and fry for 1 minute
Beat the eggs
Season with salt and black pepper
Pour over the zucchini
Fry until the bottom is golden brown
Slide onto a plate, flip and return to the frying pan
Fry until the bottom is golden brown again
Slide onto a serving platter, cut into 4 portions
