In a non-stick skillet, combine the black beans with their liquid, chopped onion, and add the cornstarch gradually until it forms a thick paste
If needed, add more cornstarch
Use a spatula to mix the ingredients in the skillet as if forming a ball
Place the skillet over low heat and drizzle olive oil around the edges to start the frittata browning
Sprinkle a little cornstarch on top, flip the frittata, and brown the other side.
