'1 diced tomato, seedless'
2 tablespoons of olive oil
2 tablespoons of finely chopped onion
2 tablespoons of red pepper flakes
1 tablespoon of fresh parsley, chopped
1 tablespoon of chopped coriander
2 tablespoons of finely chopped green scallion
250g crab meat (fresh or defrosted and drained)
to taste salt and pepper
4 eggs

Fry the oil
Add all the ingredients except the eggs
Let it fry for a few minutes
Mix the eggs with a fork
Pour into the frying pan
Let it fry, gently prodding with a wooden spoon to allow the egg to flow to the bottom
When golden brown on the bottom, slide onto a plate
Flip again and fry the other side
Slide onto a serving platter
This fritter is perfect for making in a round closed frying pan
