Farofa
1/2 cup of sugar
6 slices of pear without core and chopped
1 tablespoon of butter
Cream
1 tablespoon of unflavored gelatin white powder
3 tablespoons of water
1 cup of natural yogurt
1 cup of whipped cream, stiff peaks formed
1/4 cup of sugar
1/2 teaspoon of cardamom

Farofa
Heat the sugar over low heat until caramelized
Add the pear and butter and mix until the pear is well coated
Process in a food processor
Cream
In a bowl, hydrate the gelatin in water for five minutes
Heat in a bain-marie until dissolved
Mix the yogurt into the gelatin and add the whipped cream
Stir with a spoon
Add the sugar and cardamom and mix
Drain the liquid from the salad
When serving, alternate the fruit and cream
Sprinkle with Farofa.
