Heat the oil in a pan
Add the chicken and brown it on all sides
Add salt, water, cover, and simmer for 20 minutes, or until the chicken is tender
Rinse the spinach leaves and wash them well
Melt the butter or margarine in a pan, add the spinach and salt, cover, and simmer for 20 minutes
Drain the spinach
Drain the chicken and add it to the spinach with coconut milk
Simmer this mixture over low heat until it boils, stirring occasionally, and serve immediately
Serve warm, in four parts.
