1 large chicken cut into pieces
1 medium onion
2 whole garlic cloves
12 toasted almonds, skins removed and chopped
1 tablespoon all-purpose flour for the gravy
All-purpose flour to dust the chicken
1 cup white wine
2 tablespoons dark rum
Hot water
4 tablespoons olive oil
Salt and pepper to taste

All-purpose flour to dust the chicken

Dry the chicken pieces well, then coat with all-purpose flour, salt, pepper, and fry in hot olive oil along with the onion and garlic until golden brown
Remove the chicken from the pan and set aside
When the chicken is well cooked, remove it from the pan along with the onion and garlic and reserve
Add 1 tablespoon of all-purpose flour to the pan and stir to brown, then add the white wine and dark rum
When the wine has reduced by half, add back in the reserved chicken and garlic, cover with hot water, and season with salt and pepper to taste
Simmer over low heat with the lid on until the chicken is tender
Mash together the toasted almonds with the reserved garlic cloves, then add a little of the pan gravy and mix well for an additional 5 minutes
Serve warm
