Clean the codfish, wash it well and pat dry
Make vertical cuts and apply coarse salt
Leave the fish hanging in a well-ventilated place for four days to remove excess moisture
On the night before preparing the dish, rinse the fish and let it sit in water for at least 12 hours, changing the water several times

Heat a clay pot with olive oil over high heat
Add the onion, half of the tomatoes, garlic, and cilantro
Place the codfish pieces on top, distribute the remaining tomato and season with salt
Finish the layers with sweet potatoes
Douse with urucum oil and lime juice

When boiling, reduce heat, cover the pot, and simmer for 20 minutes
If necessary, add more salt
Gently shake the pot to prevent the fish from sticking to the bottom
Before serving, dust with chopped cilantro.
