1/2 cup coconut milk
1 cup pineapple chunks

In a saucepan, combine the pineapple, water, and sugar
Bring to a boil and cook for 10 minutes
Remove from heat, add gelatin, stir until dissolved
Add heavy cream and stir until homogeneous
Chocolate Mousse
Melt chocolate in a double boiler and mix with coconut milk
Alternate layers of pineapple mousse and chocolate mousse.
