Preheat the oven to 350°F (medium)
Grease eight ramekins with butter, then dust with sugar. Reserve
In a medium saucepan, melt the butter over high heat
Add the wheat flour and mix well until smooth (about 1 minute)
Add the milk and mix until thickened
Add the vanilla extract and 2 tablespoons of sugar; mix and remove from heat
Let it cool slightly (about 6 minutes) then add the yolks, beating constantly with a wooden spoon. Reserve
In an electric mixer, beat the whites until stiff and, gradually, add the remaining sugar, without stopping to beat, until stiff peaks form
Combine this mixture with the reserved cream and mix gently with a wooden spoon or spatula
Distribute this mixture among the prepared ramekins and arrange them in a large baking dish
Bake in a preheated oven at 350°F for about 25 minutes, or until golden brown
Dust with sugar and serve immediately
