1 envelope (12g) of unflavored white gelatin
1/2 cup of pineapple juice
1/4 cup of honey
2 cups of mashed mango
1 tablespoon of lemon juice
3 small cups of natural yogurt (600g)
2 tablespoons of vanilla extract
2 tablespoons of grated coconut

Sprinkle the gelatin over the pineapple juice
Let it sit for a few minutes and then heat it with the honey to dissolve well
Blend all the ingredients together in a blender and refrigerate until partially set
Blend until smooth, but not completely frozen
Refrigerate until firm, but not hard
If desired, serve topped with grated coconut
Serve 8 portions.
