1 cup of water
3/4 cup of sugar
4 cups of orange juice
1 cup of sugar
2 cups of cubed or chopped mango
2 tablespoons of lemon juice
1/2 teaspoon of grated orange zest
2 envelopes of unflavored gelatin (24g)
4 oranges, peeled and segmented

Grease the mold with butter and reserve
In a small saucepan, sprinkle the gelatin over the water and let it sit for a few minutes
Heat the mixture over low heat, stirring constantly, until dissolved
Remove from heat
In a bowl, combine the orange juice, gelatin, sugar, lemon juice, and grated orange zest
Pour 1 cup of this mixture into the mold and refrigerate until almost set (do not let it set completely)
Remove from refrigerator and arrange the orange segments and mango cubes on top of the panna cotta
With care, pour another 1 cup of the gelatin mixture over the fruit
Refrigerate until firm again
Add the remaining gelatin and refrigerate until fully set (about 6 hours)
Unmold and serve cold
