Beat the egg whites until snowy
Add the cornstarch and beat until it forms a meringue-like consistency
Add the coconut milk, shredded coconut, and lemon juice
Dissolve the gelatin in the boiling water and add to the previous mixture
Mix lightly
Pour into a decorative mold
Refrigerate and unmold once set.
