5 orange peels

Boil the whole fruits in sufficient water to cover them
If necessary, use a weight to keep the oranges submerged for 1 1/2 hours or until they are soft
Drain
Peel the oranges and lime, removing the fine skin
Cut into thin strips
Remove the white part of the oranges using a serrated knife. Reserve
Cut the oranges into fine slices, but with care so they don't break apart
Remove the seeds and reserve
Tie up the orange peel removed from the oranges, along with the seeds, in a piece of cloth
Place the oranges and lime (also cut) in a large bowl
Add the sugar, water, and seed bag
Cover and let it rest for one day to the next
The next day, place it in a pot and start heating over low heat, stirring until the sugar dissolves
Increase the heat and let it boil until it reaches the consistency of gelée
Squeeze the seed bag against the sides of the pot to extract well and then discard
Remove, afterwards, the foam that forms on the surface and place the gelée in hot, dry, and sterilized jars
Close immediately
Makes 2 jars of 350g.
