4 cups of sugar

4 cups of beautiful strawberries (560g)
1/2 cup of lemon juice

Bring the sugar and water to a boil
Stir until the sugar dissolves
Let it simmer for 5 minutes, then add some strawberries each time the mixture starts to thicken
Add the lemon juice gradually, stirring occasionally
After adding all the strawberries, cook slowly without stirring until the gelée reaches the desired consistency (when a small amount dropped onto a plate doesn't flow)
Remove any foam that forms on the surface
Pour into a sterilized and warm glass jar
Close immediately
Let set for 3 cups or 24 portions.
