6 medium ripe pears

2 limes, seeded and sliced

Peel the pears, remove the seeds, and cut into small pieces
Combine the pears with sugar, ginger, and lime in a saucepan (preferably one made of copper)
Cover and refrigerate for at least 24 hours
The next day, heat over high heat to boiling point and cook for 10 minutes, stirring frequently
Reduce heat and simmer for about 35 minutes, or until the mixture becomes transparent or when a small amount of it placed on a plate thickens upon cooling, indicating gelée is formed
Pour into sterilized glass jars and seal tightly
Allow to mature at room temperature for at least 1 liter jar.
