Mix everything in a blender and then transfer it to a pot
Bring to a simmer over low heat until the desired consistency is reached
During cooking, remove any foam that forms
Test the consistency by placing some of the gelato on a cold plate
Wait for a few minutes and tilt the plate; if the gelato doesn't run, it's ready
Serve with roasted meats
To store, place in an sterilized glass container, well-covered
Store in a cool place
This gelato will keep for up to a month.
