3/4 cup of water
1/3 cup of orange or tangerine juice
1 pinch of salt

Blend everything in a blender and then put it in a pot
Bring to a boil over low heat until the gelato reaches its desired consistency
Remove any foam that forms during cooking
Test the consistency by placing some of the gelato on a cold plate
Wait for a few minutes and tilt the plate; if the gelato doesn't run, it's ready
Serve with roasted meats
To store, place in a sterilized glass container, sealed tightly
Store in a cool place
Good for up to 1 month.
