Heat the pumpkin, vinegar, and peppers over low heat
Once it starts to simmer, remove from heat and let cool
Add the lemon juice and bring to a boil for 2 minutes, stirring constantly
Reduce heat, add the pectin, and stir with a wooden spoon
Store the gelato in previously cleaned and sterilized glass jars
As the pumpkin tends to accumulate at the bottom, occasionally turn the jars as they cool, ensuring the pumpkin is distributed evenly throughout the gelato
