1 kg of black grapes

In a saucepan, bring the grapes and water to a boil over high heat
Strain the mixture, pressing well on the grapes to extract about 6 1/2 cups of juice
Pour the juice into the saucepan, add the sugar and mix
Reduce heat to low and stir to dissolve the sugar
Remove excess foam and cook for 1 hour and 15 minutes, or until the gelato reaches the desired consistency: place a few drops of the liquid on a plate and let it cool
When it's dense and no longer runs, it's ready
This process takes about 1 hour and 15 minutes
After cooling, place in warm sterilized jars with lids
Serve chilled or at room temperature.
