Wash the grapes very well and remove the seeds
Place the grapes in a pot without water
Cook over low heat, stirring constantly with a wooden spoon until the grapes are soft
Let it cook for about 5 minutes
Strain the grapes and their juice into a fine-mesh sieve lined with cheesecloth or a clean cotton cloth, allowing all the liquid to drain into a glass or ceramic bowl, without pressing, until all the liquid has drained
Calculate that for 4 cups of grapes, you will need about 3 1/2 cups of sugar
Cook the grape juice with the sugar over low heat, stirring constantly, until the sugar dissolves
Cook, stirring, until the mixture thickens slightly
To check if it's ready, place a small amount of the gelato on a plate and let it cool for a bit
If it holds its shape when the plate is lifted, it's ready
Remove from heat and pour into sterilized glass jars while still warm
Close well
Let set at room temperature or in the refrigerator for 1/2 liter.
