Beat the butter or margarine, gradually add the cocoa powder while continuing to beat
Chocolate: Add 90g of melted chocolate to the butter, increase the cocoa powder to 3 cups and add more milk if needed
Lemon: Add 1 tablespoon of grated lemon zest and 1 egg yolk without beating, to the butter
Increase the cocoa powder to 2 1/4 cups
Use orange juice and a little lime juice instead of milk.
