2 medium tomatoes, seeds removed;
1 medium Anaheim pepper, seeded and chopped;
1/2 medium bunch of fresh cilantro;
1 medium avocado;
1 medium lime, juiced;
1 medium onion, finely chopped;
3 tablespoons olive oil;

Cut the tomato and onion into small cubes and chop the cilantro
Remove the pit from the avocado, scoop out the flesh, and place it in a shallow dish
Mash with a fork, leaving some chunks, and drizzle with lime juice
Add the tomato, onion, cilantro, olive oil, and salt
Cut the Anaheim pepper in half, remove the seeds, and chop into small pieces
Season to taste
Mix everything together and serve with tortilla chips or corn nuts.
