For the burgers
2 oz mignon beef
1 thin slice of smoked bacon
1/4 cup pork belly, finely chopped
1 teaspoon Jamaican allspice, ground
1/2 teaspoon black pepper, ground
Salt to taste
Oil for grilling

3 lbs onions, peeled and cut into thick slices and small pieces
1/2 cup white wine vinegar
8 oz applesauce
5 whole cloves of garlic, minced
1 cinnamon stick
2 bay leaves
1 tablespoon grated ginger
1 teaspoon curry powder
4 teaspoons turmeric powder
5 peppercorns

Burgers
Chop the pork belly into small pieces using a meat grinder or a food processor
Cut the mignon beef and bacon into small pieces, making sure they're not too fine
Mix the ground meats, bacon, and pork belly together
Season with salt, black pepper, and spices, then shape the burgers into patties
About 4 minutes before serving, heat a non-stick skillet or grill pan over medium-high heat
Add the burgers and cook for about 4-5 minutes per side, or until they're cooked to your liking
Onion Chutney
Simmer all ingredients over low heat for one hour.
