1/4 cup of olive oil

2 green and 1 red bell pepper, diced
6 tomatoes, cut into pieces
2 3/4 cups of cooked black beans, soaked overnight (500g)

1 cup of coconut milk
1 ripe banana, sliced
1 tablespoon of hot sauce

In a large pot with the olive oil, sauté the smoked bacon, onion, garlic, and bell peppers for 5 minutes over medium heat
Add the tomatoes, cooked black beans, and water
Cover the pot and simmer until the flavors meld together
Add the coconut milk, bananas, and hot sauce
Season with salt to taste
Serve warm.
