2 cans of tuna
'1/2 cup of chopped parsley (scallion) and salt to taste

8 large and firm tomatoes

Rinse the tuna well and soak it in water for a bit to remove excess oil
Chop the tuna finely and mix with parsley, scallion, seasonings, and vinegar
Refrigerate for 1/2 hour
Cut off the top of each tomato and scoop out the insides
Fill the tomatoes with the tuna mixture and serve on lettuce leaves.
