Grate the carrot fine
Squeeze out excess moisture and mix with bell pepper, egg, onion, and parsley
Season with salt and pepper
Shape into 1/4 cup patties and coat in flour
Heat a large non-stick skillet over medium heat and add half of the oil
Cook 4 burgers at a time, flipping when golden brown, until all are cooked through
Flip and cook the other side, then repeat with remaining oil
